SPINACH CREAM CHEESE BAGELS

This is one of my favorite special lunch recipes or a recipe for a meatless meal!

Spinach Cream Cheese Bagels

 3-4 bagels, plain or flavored or a bag of mini-bagels
1 - 8 ounce bar of low fat cream cheese

1- 10 ounce frozen spinach

Tomato slices

Provolone cheese

salt and pepper
 
Cook spinach in microwave. Squeeze out excess water.  Stir in cream cheese until well blended.  If cream cheese is too hard, microwave for a few seconds to soften. Add salt and pepper to spinach mixture. Open bagels and spread on a cookie sheet.  Top bagels with some spinach cream cheese, a tomato slice and a slice of cheese. Bake in oven at 350 for around 10 minutes until hot and the bagel is a little crispy.

I make the big bagels for lunch and the minis for parties.
